I have been living in a farming village for just over 3 years and 3 out of my 4 dogs can now be walked in the same field as livestock (Jacob, Piper and Vixen). Bee is a terrier cross and its taken the 3 years to train her to walk in fields next to livestock fields without showing interest in the sheep through the fence. I would never trust her off lead in the same field, she is too unpredictable. Each day the sheep seem to be moved into different fields so none of my dogs are let off lead until I work out where the livestock is/isn't. Thankfully I can view the first 5 fields from my bedroom window so I can quickly check before leaving home.
