squeaky and excitable

Our cocker has just turned 7 and he still seems like a pup. He is very excitable and gets wound up over the littlest things such as changing his water.
I have recently been getting back into field sports and have started trying too take him out with me. I was quite surprised that he seems too have a natural hunting instinct despite being show bred.
But the excitable nature of him is a night mare. When I get him out the car and let him off the lead he runs around yapping which is fair enough too start with but two hours later if a bramble as much as gets in his way and slows him down he yaps. The same at gates and hedges we cross.
I took him too classes once and the trainer did say he seems too bounce off me as in he picks up the vibes from me as I am sure he senses it does my head in and stresses me out.
I think this is all my fault for not training him properly as a pup or are some dogs just like that and is there any thing I can do
