Removing Background from a Photograph?

Not sure if anyone can help, but if they can I woiuld be very grateful.
I am trying to remove the background from a photograph, with very little success, I hasten to add.   I want to leave it white to put the image onto a canvas bag.
I have Adobe Photoshop Sarter Edition 3.0 or Photo Impression 5 to work with and I have just been trying to do it by erasing it.  I know you can do it with layers, but Haven't a clue how.

This is the photo I am trying to do.

Can you not just use the lassoo(sp?) tool to cut around it then paste it as a new picture?

Thanks for all your suggestions, but I am totally computer illiterate, with the exception of using the internet of course.   :005:  I will have to have a look and see what a lassoo tool is.   :embarassed:
I like the background too, if I could have sort of roughed it up a bit around the edges, I may have kept it, but it is too 'square'.

Or if you like the background just soften the square edges with the airbrush tool?

Not perfect as done in a rush, using Serif Photo plus :D I will try and tidy it up later.

Wow, you ladies are sooo talented.  I am totally at a loss with anything like this.  I think I need to get myself off on a course or something.   I have been trying to do this all weekend.   ::)

I like the soft edges, can it be done in an ovalish shape though rather than rectangle.  I do love the background it was just too straight lines for what I want.  I want it printing onto a canvas bag and also a t-shirt for a young girl at our ringcraft, who is totally in love with Amber.   I know that is a bit cheeky, but I am amazed at what you ladies have done so far.   :D
