I noticed that whenever I post in the 'off topic' part of the forum..I don't get a 'post'..lol..I was just wondering why this is?

They don't count towards your total that you see on your posts. I'm not sure why.

If you go in into your stats though you can see your 'real' total which counts them.

Generally speaking the more 'fun' areas of the forum don't increase a members post count, the more serious area's such as cocker discussion, health etc do.
The reason for this is that if all forum areas counted then the post counts would be extraordinarily high so therefore members who assist other members in the 'on topic' areas (ie about cockers) will gain a higher post count then members who post in 'off topic' areas.
