Title: How to stop liver cake rising?

Hi There,

Mods, apologies if in the wrong section, please feel free to move if wrong! :D :D

I need some guidance with my liver cake!

When I make it, the top always seems to raise and split from the rest,not really a problem, as I cut it off seperately, but am I doing something wrong?.

I use, Liver (obviously!) plain flour, 1 egg, herbs and garlic, s/s milk, whizz all together and bake.

any ideas please? :D

perhaps cooking it on too hot a heat or perhaps the thickness is not quite right - sorry not much help

I've never cooked livercake, but perhaps pricking the top with a fork, like you'd do with pastry or shortbread, might help?

when i make liver cake i just blend the liver then add 2eggs reblend the pour into a bowl and then add sr flour and garlic powder mix in the put in a tray and bake at 180 for 25mins. i never weigh anything just put in what i think looks ok :lol2: dogs still eat it

I think that I was cooking it too high ;)

Have done three lots so far, one in the micro, one just out of the oven and the last still cooking.

I turned the heat down and that seems to have done the trick,
although it did shrink in the micro it has come out more rubbery, so easy to cut and handle :D

I also just chuck it all in and see what works, never had a dog turn their nose up at it yet :luv:

i usually add grated carrot as well, just to bulk it out a bit

I always add a small amount of oil, but I don't use milk. As strange as it seems, lambs liver cooks better than other varieties, but they all make the house equally smelly. I have never tried microwave will give that a go, thanks for tip.

I use oil too rather than milk. What tin are you using? I use a swiss roll tin, bake in 180 fan oven for 18 mins. It comes out about 1.5 cms high, I then cut into 1cm squares

I use oil and do mine at med power in the microwave on a regular size dinner plate - then nuke a cup of water/lemon juice to get rid of the smell lol

Tin wise, er, the grill pan!! :D

I don't do 'baking' except for the dogs! ;) they dont care what things look or taste like! and can't complain!

the two batches from the oven today have come out much better, and the top hasn't lifted and split, but I did as recommended and turned the heat down. after four years, I still forget it is a fan oven ph34r

nice tip about the water/lemon juice!!, will try that, I had the kitchen window open and the extractor fan on!!
