Whatever the breed, a pregnancy's bitch from the moment when eggs are mature and can be fertilized (about 54h after ovulation) to pups' birth is 61 days.

Our dog Sapphire had one mating and give birth on day 57.

Are you planning on breeding or working out when a litter of pups will be born?

Penny was 56 days and Phoebe was 59 days, but both had large litters.

It is not variable. It only depends on the day you start to count and it usually starts when the bitch is mated which does not always match to the day when eggs are mature. When you start at this time, it is 61 days (whatever the breed).

The book says it is on average 61 days : it is right but it is the same for every breed.

My Inca had a litter of 9, 9 weeks ago, she whelped on day 62 from her first mating.

It is not variable. It only depends on the day you start to count and it usually starts when the bitch is mated which does not always match to the day when eggs are mature. When you start at this time, it is 61 days (whatever the breed).

I'm a little confused here or my dogs are exceptions to the rule.
Both had premate tests done, first one because it was my first time and I was travelling quite a distance had had already gone too early (no mating took place). Penny's premate test said probably ovulated mate immediately which happened the same day. She did not tie so she was mated again the day after. Penny went exactly 8 weeks from first mating which is 56 days. 57 days if you take it from 2nd mating.
Phoebe had a premate because it was one mating. I had a dog at home and was pretty certain she was ready. Had premate just to help that said again probably ovulated worth mating vet nurse said it was the last thing before it's too late. She whelped at day 59 from her only mating.

If the eggs where immature fertilisation would have taken place later because eggs need time to mature and if eggs were too ripe they would have probably missed as sperm couldn't get to them quickly enough.

The length of gestation according to the canine reproduction book is more variable when measured from day of mating having an average of 63 days but a normal range between 59 and 70 days. Gestation is much less variable when the onset of diestrus is used to calculate the length as on that date all the bitches are at the same stage of pregnancy. The average length when diestrus is used is 57 days, but then if you count from the day of conception the average using this method is 60 days. I can't see anywhere where is states it is always a certain amount of days only avaerage lengths.

Which kind of premate test had been done ?

I have always been told that eggs' maturation took 48h but the last study I heard of talked about 54h. For an artificial insemination with frozen semen, you need to wait for 3 days before doing it to be sure it will work. Studies said that waiting for 2 days was to short.

I was talking about this with my colleague before coming home and he told me that starting counting from the ovulation day was pretty sure : 63 days +/- 1 day.

Everything that I have read has quoted 63 days as the length of a normal pregnancy and that is what I go by with my girls. Interestingly the length of all of my girls pregnancies have been fairly consistant with litters born between day 60 - 63. I have had one litter born on day 59 which were big strong puppies so obviously not premature. I must say that if my girls had not whelped by day 63 I would be speaking to my vet

It was premate from the vets, need a blood sample and then wait about 30 mins for the results.
Either way I look at it mine came early. Both had litters of 11 pups  and both litters contained similarly sized pups most being between 240 to 290g birth weight.
