This is adapted from a couple of recipes I found on the internet. I replaced half the flour with oatmeal because William can't cope with much wheat in his diet. You could also replace some of the banana with peanut butter, which I would have done if I hadn't been taking cake to William's training class where I don't know if any of the people or dogs have nut allergies.
The recipe makes huge quantities. I baked it in an 8" by 12" roasting tin and froze half of it for Louis' first birthday next month. The half used yesterday was cut into 16 squares.
It's an American recipe so is measured in cups.
2 cups mashed bananas
1/2 cup soft margarine/butter
3 eggs
3/4 cup water
2 cups flour (I used 1 flour & 1 oatmeal)
2 teaspoons baking powder
1 teaspoon ginger paste or ground ginger
2 teaspoons cinnamon
Beat the mashed bananas and margarine until creamy and soft.
Add the eggs and water and beat well.
Add the dry ingredients and beat until all the ingredients are combined and fairly smooth.
Turn into a well greased tin and bake at 160C (fan oven) or gas mark 4.
When cold top with very low fat cream cheese, cut into squares and top with carrot batons or grated carrot.
