Can they see all of our details emails ect?

I just logged on as a guest and the email addresses are hidden.

You need to check the box "Hide Email Address from Public" in your Profile (Account Related Settings) if you want your email address to be hidden.

Yes, that's if you want it hidden from members as well as guests ;)

Sorry I should have said that ;) I'd recommend every member checks this box for privacy reasons otherwise there is nothing to stop someone joining COL & harvesting visible email address for spam purposes. Of course genuine members wouldn't do this but better safe than sorry ;)
